Carrot-and-Orange Waffles with Walnuts
These waffles made with carrot-and-orange juice and walnuts are perfect for a cosy family breakfast when you want to serve something special without the fuss. There are very few ingredients, and the sweetness comes naturally from the carrot and orange juice. With no added sugar, they are aromatic and tender, enjoyed by adults and children alike. Serve with Greek yogurt, honey, or on their own — they're delicious as is.

Ingredients
- 2 eggs
- a pinch of salt
- 250 ml carrot-and-orange juice
- 200 g plain flour + 20 g if needed
- 50 g walnuts, toasted beforehand
- 2 tbsp rum
- To serve: honey
- To serve: walnuts
- To serve: Greek yogurt

Method

Preheat the waffle maker until it is well heated. In a bowl, lightly beat the eggs with a pinch of salt using a fork.

Add the carrot-and-orange juice and rum, mix well. Then add the flour in two stages, mixing thoroughly each time until smooth. Finally stir in the toasted, coarsely chopped walnuts.

Spoon the batter onto the hot plates of the waffle maker. Close the lid and cook until the waffles are cooked through and have risen.

Transfer the cooked waffles to a cooling rack and cover with a dry tea towel to keep them soft and fluffy.

Serve with honey, Greek yogurt and extra walnuts.

Notes
💛 It's best to toast the walnuts in advance — this brings out their flavour.
💛 Add the final 20 g of flour only if needed, if the batter is too runny.
💛 To keep the waffles soft, don't stack them directly on top of each other without a towel immediately after cooking.
