French toast with avocado, eggs and hard cheese
These french toasts are a great idea for a relaxed brunch or a light lunch. Crispy wholegrain bread, a soft avocado cream, eggs and flakes of hard cheese combine very harmoniously. The recipe is simple and quick: lightly toast the bread, cook the eggs and assemble the toasts with minimal fuss. Best enjoyed right after preparation.

Ingredients
- 8 slices wholegrain sliced bread
- 3 small ripe avocados
- 1 lime
- 4 eggs
- 10 g butter
- 3 tbsp extra-virgin olive oil
- hard cheese, in flakes or thin shavings — to taste
- salt — to taste
- black pepper — to taste

Preparation

Spread the bread slices with butter on both sides. Toast them in a dry non-stick frying pan for about 2 minutes on each side, until golden and crisp.

Meanwhile, hard-boil the eggs: 8 minutes from the moment the water boils. Transfer to cold water, cool, peel and cut into wedges. Halve the avocados, remove the stones, peel and mash the flesh with a fork. Add lime juice, olive oil, salt and black pepper, and mix until smooth and creamy.

Assemble the toasts: spread the avocado cream over 4 slices of bread, top with the egg wedges, add flakes of hard cheese and a little black pepper. Cover with the remaining slices and serve immediately.

Notes
💛 Choose soft ripe avocados so the cream turns out silky.
💛 For a more pronounced flavor, add a little extra lime juice before serving.
💛 Serve the toasts right away while the bread remains crispy.
