Toasts with Hummus, Avocado and Fried Egg
This is a simple savory breakfast for two: toasted bread, a layer of hummus, slices of avocado, cherry tomatoes, arugula and one fried egg on top of each. The dish should look like two finished open-faced toasts, not a plate of separate ingredients. Hummus gives creaminess, avocado makes the breakfast more filling, and an egg with a soft yolk brings everything together.

Ingredients
- 2 slices good bread
- 6 tbsp hummus
- 1 avocado
- a handful of cherry tomatoes
- a few arugula leaves
- 2 eggs
- 1 tbsp sesame seeds
- a pinch ground cumin
- 1 tsp lemon juice
- olive oil for serving
- butter or olive oil for frying the eggs
- salt and black pepper to taste

Method

Toast the bread in a toaster or in a dry skillet until golden. Spread each slice with hummus and lightly sprinkle with cumin.

Slice the avocado, squeeze over the lemon juice, season with salt and pepper. Arrange the avocado on the toasts over the hummus.

Add halved cherry tomatoes and a few arugula leaves. Toast the sesame briefly in a dry skillet and sprinkle it over the toasts.

Heat a little butter or olive oil in a skillet. Fry 2 eggs so the whites are set but the yolks remain soft. Place one egg on each toast.

Drizzle the toasts lightly with olive oil, add black pepper and serve immediately while the bread is still crisp and the yolk is warm.

Notes
💛 The bread should be sturdy enough to hold the hummus, avocado and egg.
💛 Fry the eggs last so the toasts don’t get soggy.
💛 If you don’t like runny yolks, cook the eggs a little longer.
