Grilled Fig and Lemon Ricotta Toasts with Balsamic
If you want to freshen up a familiar breakfast, these toasts are just the thing. Creamy ricotta with lemon zest, warm pan-grilled figs and a few drops of balsamic come together simply but deliver a bright flavor. This option works not only for mornings — serve it as a light snack or brunch, and the figs can be prepared ahead if desired.

Ingredients
- 250 g ricotta
- zest of 1 lemon
- 6 fresh figs, halved
- 1 tbsp olive or sunflower oil
- 3 tbsp balsamic glaze or balsamic vinegar
- 4 slices wheat bread
- a handful of arugula or other greens
- sea salt and black pepper, to taste
- a little honey, optional

Preparation

Mix the ricotta with lemon zest, a pinch of salt and black pepper. Let the mixture rest for 10–15 minutes.

Heat a grill pan or a regular skillet over medium-high heat. Brush the figs with oil, add 1 tbsp of balsamic glaze or vinegar, and sear cut-side down for about 1–2 minutes, until the figs are warm and slightly caramelized.

Toast the bread. On each slice spread the lemon ricotta, top with greens and the warm figs.

Drizzle the toasts with the remaining balsamic glaze or vinegar and, if desired, add a little honey for extra sweetness. Serve immediately while the bread is crisp and the figs are warm.

💛 A well-heated grill pan is a good alternative to an outdoor grill.
