Bruschetta with Caramelized Peaches and Rosemary
These appetizer bruschettas, despite their seeming simplicity, are actually an ideal combination of textures for me: crunchy toasted baguette, soft and cool ricotta, and warm, spicy, sweet-and-sour peaches ☺️ They are perfect for breakfast or as an appetizer for guests.

Ingredients
- 4 slices of baguette
- 50g (about 1.76 oz) ricotta
- 1 peach
- 1 tablespoon of sugar
- rosemary
- butter
Instructions
-
Slice the baguette, lightly butter both sides, and toast until golden brown.
-
Slice the peach into wedges. I don't peel them; that way, during caramelization, they hold their shape well. Place sugar and rosemary on a dry non-stick skillet.
-
Heat the sugar over medium heat until it first melts and then begins to turn a golden color. Be very attentive here, as it can burn quickly; the color should be golden.
-
Quickly place the peach slices into the caramel and fry on both sides until they have a caramelized crust.
-
Hold yourself back from eating them right now in this form 😉. Spread ricotta on the baguette slices and top with the peach slices. Now you can enjoy, bon appétit 🤗☺️
