Cottage Cheese Galette with Cherries
You definitely need this, just trust me 🤗 It's super quick to make (the dough is mixed in one bowl), and there’s a looooot of delicious filling. The perfect summer pastry. So, take notes:
Base
- 180g (one package) of soft cottage cheese (approx. 6.3 oz, I used 5% fat)
- 100g of soft butter (approx. 3.5 oz)
- 2 tablespoons of sugar
- 1 egg
- 200g of flour (approx. 1 2/3 cups)
- Cherries, sugar for them, cinnamon
Preparation:
- Whisk the soft butter with sugar, add the cottage cheese, egg, and mix well until smooth.
- Sift the flour and knead the dough. If it turns out soft, do not add more flour, as it will become too dense. Instead, place it in the refrigerator for 30-40 minutes.
- Roll out the dough on parchment paper into a round shape. Spread the cherries evenly, leaving 3-4 cm (approx. 1.2 to 1.6 inches) of the edges free around the diameter. Sprinkle with sugar (adjust according to the sweetness of the cherries) and sprinkle with cinnamon.
- Fold the edges of the galette. Bake at 180°C (350°F) until the edges are golden brown.
