Lemon-Lime Cake

I simply adore that fresh, contrasting taste, the perfect blend of sweet and sour in a soft, moistened cake. 🥰 I love this recipe for its simplicity; it will surely work out even for those who don’t have much baking experience. At the same time, it’s truly delicious. Ingredients

  • 200g (1.6 cups) flour
  • 200g (1 cup) sugar
  • 8g (2 teaspoons) baking powder
  • 1/2 teaspoon of salt
  • 2 eggs
  • 120g (1/2 cup) kefir (or yogurt)
  • 2 lemons
  • 1 lime
  • 150g (3/4 cup) sugar for glaze

Preparation

  1. Preheat the oven to 160°C (320°F). In a bowl, mix all the dry ingredients: flour, sugar, baking powder, salt, zest one lemon and lime into it, and mix everything well.

  1. Separately, beat the eggs until slightly foamy, add kefir and mix as well.

  1. Prepare the cake pan. You need to do a “French shirt”: grease the pan with soft butter, generously flour the sides and bottom, then turn it over and tap to remove excess flour. Now you don't have to worry about the cake sticking to the pan.

  1. Combine the dry and wet mixtures until smooth and pour the batter into the pan.

Bake for approximately 40-45 minutes (check for doneness with a skewer: if you poke the cake in the center, it should come out dry).

  1. While the cake is baking, prepare the soaking syrup. Squeeze the juice from the two lemons and lime, it should make around 200ml (about 3/4 cup). Add sugar, bring to a boil, and simmer for 5 minutes.

  1. Once you take the cake out of the oven, pour about 2/3 of the syrup over the top and sides while it's still hot, so it gets fully absorbed. Even if it seems like too much syrup, trust me, it’ll be worth it 😉. Let the cake cool in the pan.

Once the cake has cooled, remove it from the pan. Simmer the remaining glaze until it becomes a golden color and coat the top and sides of the cake with it. All done 💛 Brew yourself some tea or coffee and join in 🤗 Enjoy!
