Crustless quiche with smoked salmon and broccoli

This crustless quiche is a great option when you want something simple, nutritious, and tidy in flavor. A tender egg base, broccoli and smoked salmon combine very harmoniously. Thanks to thick plain yogurt the texture is soft and creamy without being too heavy. It’s good warm or chilled, so the recipe works well for breakfast or a light lunch.

Ingredients

  • 1 medium head of broccoli
  • a little olive oil for greasing
  • 2 spring onions (scallions), finely chopped
  • 8 large eggs
  • 2 tbsp thick plain yogurt
  • 4–6 slices smoked salmon, cut into small pieces
  • salt
  • freshly ground black pepper

Method

  1. Preheat the oven to 200°C. Break the broccoli into small florets and boil or steam for 3–4 minutes. Transfer to a colander, drain well, and let cool slightly.

  2. In a skillet lightly greased with olive oil, sauté the spring onions over medium heat for 2–3 minutes until softened. In a separate bowl, whisk the eggs with the thick plain yogurt, a pinch of salt and pepper until smooth.

  3. Place the broccoli, smoked salmon and onions in a 20 cm round silicone pan or a baking dish. Pour in the egg mixture and bake for 20–25 minutes, until the quiche is set and lightly golden on top. Serve warm or chilled.

Notes

💛 Dry the broccoli well so the filling doesn’t have excess moisture.

💛 If you’re not using a silicone pan, lightly grease the dish.

💛 Check doneness in the center — it should be set with no liquid in the middle.

💛 The quiche is convenient to make ahead and serve cold the next day.
