Huevos Rancheros

Huevos rancheros is a very colorful Mexican breakfast: a warm tortilla, a rich spicy tomato base, and fried eggs. This dish is quick and easy to make — exactly what you need in the morning.

You can make the tomato sauce for several days at once and store it in the refrigerator, which will save you time when mornings are short on it.

Ingredients

  • 1 red bell pepper
  • 1 small onion
  • 2 tbsp oil
  • 300 g tomatoes
  • 1/2 tsp cumin
  • 1 pinch of salt
  • 4 eggs
  • 2 tbsp olive oil
  • chili flakes
  • salt to taste
  • 4 tortillas
  • 4 tbsp feta, diced
  • 2 avocados
  • parsley or cilantro

Preparation

  1. Dice the tomatoes finely, keeping all the juice in a bowl. Peel the onion and dice it finely as well. Cut the red pepper into the same small cubes.

  2. For the tomato sauce, heat 2 tbsp oil in a non-stick pan over medium heat. Add the onion, pepper, and a pinch of salt. Cook for 7–8 minutes, until the onion becomes translucent but does not brown. Add the tomatoes with their juice and 1/2 tsp cumin. Cook over medium heat until the mixture becomes thick and almost no liquid remains. Set aside.

  3. Warm the tortillas: lightly grease a non-stick pan with oil and fry each tortilla for about a minute on each side.

  4. In a separate non-stick pan, heat 2 tbsp olive oil and fry the eggs. Sprinkle them with salt and chili flakes. Meanwhile, cut the avocados in half and slice each half. Prepare the feta and finely chop the parsley or cilantro.

  5. To serve, place a tortilla on a plate, top it with the tomato sauce, and place an egg on top. Crumble a little feta over it and add the herbs. That’s it — your tasty and nourishing breakfast is ready ☺️
