Chocolate Cookies with Chocolate
The name of these cookies says it all: chocolate chocolate with chocolate 🥰 Is there anything more wonderful? If you love chocolate as much as I do, then definitely not 😉

Ingredients
- 125 g soft butter
- 25 g powdered sugar
- 110 g flour
- 15 g cocoa powder
- 25 g cornstarch
- 2 g fine salt
- 50 g heavy cream (30% fat)
- 50 g chocolate (56%)

Preparation

Beat the soft butter with the powdered sugar and salt until light, fluffy, and pale.

Sift the flour, cornstarch, and cocoa into the butter mixture and mix until smooth.

Shape the dough into balls about the size of a walnut. Flatten them slightly on top and press an indentation for the future chocolate filling. I find it convenient to do this with a tool used to remove the core from apples 🙂.

Bake the cookies at 180°C for about 15 minutes. It’s very important not to overbake chocolate cookies, otherwise they will be dry.

For the filling, heat the cream until white steam begins to rise from it (important: do not bring it to a boil). Add the chopped chocolate and stir until the mixture becomes smooth and uniform.

Fill the indentations in the cookies with the filling and let it set.
